Salads!

Here at the Macready-Walton residence we eat a lot of salad and today I'm going tho share two of my favorites with my readers.


Spinach and Strawberry Salad (serves 8)

2 bags of spinach (Dole has it for $.99 on sale at Smiths right now)
1 box strawberries (cut `em up)
2 cucumbers (peeled and diced)
1/2 cup feta cheese
1/2 cup walnuts

Dressing

1/4 cup of plain yogurt
1/4 lemon juice
2 tblsp olive oil
2 tblsp honey (I use a lil' more)
1 tblsp fresh chopped basil
A pinch or two of salt and pepper

Its easiest if you combine yogurt, lemon juice, and olive oil together first and whisk it, then add in the other ingredients. Toss it into the salad and put it in the 'fridge until its time to eat.

Vegetarian Taco Salad (serves 8)

1 head of romain lettuce
1 head of iceburg
6 Roma tomatoes or cherry tomatoes if they are on sale  (cut or diced)
2 cucumbers (peeled and diced)
1 can of black beans (drained and rinsed)
1 can of olives (I prefer whole because little fingers like them)
3 avocados (halved and sliced)
Onions if you want, I'm not a fan

Toss the ingredients and put on a bed of chips.

Hot sauce
Shredded cheese
Jarred jalapeƱos
Sour cream
Salad dressing
We use Fritos for our salad but Doritos or regular tortilla chips are good too
